Ingredients:
- 1lb mussels
- 1 small fresh red chilli
- 6 tbsp olive oil
- 2 garlic cloves, finely chopped
- pinch of paprika
Method:
Remove and discard the chilli seeds and finely chop the chilli flesh
Heat oil in pot over medium heat. Add the garlic and cook for 30 seconds, stirring. Add 1lb of mussels into the pot and continue cooking for 3 to 4 minutes. Add the chilli and paprika, and simmer for 3-4 minutes with occasional stirring. Ensure mussels are fully open and hot through before serving. |
