Ingredients:
- 1lb mussels
- 1 tablespoon olive oil
- 2 garlic cloves, finely chopped
- 2 spring onions, finely sliced
- 1 cup of cream
- finely grated rind of 1 lemon
- ∏ cup dry white wine
- fresh chopped parsley
Method:
Heat the olive oil in a large pot over medium heat. Add the garlic and spring onions and cook for a few minutes. Add the cream and wine and continue heating. Add 1 lb of mussels into the saucepan and cook on high for 3-4 minutes. Add the lemon rind, reduce heat and simmer for 3 minutes with occasional stirring until all mussels are fully opened and hot through. Sprinkle with parsley and serve immediately.
Accompany with fresh crusty bread for dipping in the sauce. |
