Ingredients:
- 1lb mussels
- 2 oz butter
- 2 garlic cloves, finely chopped
- 2 spring onions, finely sliced
- 1 lemon, juiced
- fresh chopped parsley
Method:
Heat the butter in a large pot over medium heat. Add the garlic and spring onions and cook for a few minutes. Add 1 lb of mussels into the saucepan and cook on high for 3-4 minutes. Add the lemon juice, reduce heat and simmer for 4 minutes with occasional stirring until all mussels are fully opened and hot through. Sprinkle with parsley and serve immediately.
Accompany with fresh crusty bread for dipping in the butter sauce. |
