STEAMED MUSSELS WITH A TASTE OF MEDITERRANEAN  
Ingredients:
  • 1lb mussels
  • 3 tomatoes, finely diced
  • 3 tablespoons tomato paste
  • 1 oz of sun-dried tomatoes, diced
  • 1 onion, diced
  • 2 garlic cloves, finely chopped
  • 1 yellow pepper diced
  • 1 oz chorizo, diced
  • freshly chopped parsley and basil

 

Method:

Heat the olive oil in a large pot over medium heat.  Add the garlic and chopped onion and cook for a few minutes.  Add the tomatoes, tomato paste, sundried tomatoes, yellow pepper, chorizo and continue simmering.  Add 1 lb of mussels into the saucepan and cook on high for 3-4 minutes. Reduce heat and simmer for 3 minutes with occasional stirring, until all mussels are fully opened and hot through.  Sprinkle with basil and parsley and serve immediately. 

Accompany with your favourite pasta or spaghetti.
