Provencale Style Mussels

 
Ingredients:

1 lb mussels

2 fl oz olive oil

4 tomatoes, diced finely

3 tablespoons tomato paste

3 cloves of garlic, finely chopped

1-2 tablespoons sugar

2 fl oz white wine

Freshly chopped parsley and basil

Salt and pepper to taste.

 

Method:

Heat the olive oil over medium heat in a large pot.  Add the garlic and cook for 2-3 minutes. Stir in the tomatoes, tomato paste and sugar and simmer for 3-4 minutes.

Add the mussels and white wine. Cook on high heat for 3-4 minutes. Reduce heat and simmer for a further 3 minutes, continuing stirring until the mussels have fully opened. Sprinkle with parsley and basil and season as desired.

Serve with freshly cooked spaghetti, garnished with parmesan cheese.
