Mussels in a Creamy Mariniere Sauce

 

Ingredients:

  • 1lb mussels

  • 2 tablespoons butter

  • 2 stalks celery, cut into pieces

  • 1 cup dry white wine

  • 1 large onion, sliced

  • 2 garlic cloves (optional)

  • 2 sprigs fresh thyme & bay leaves

  • Handful fresh chopped parsley

  • ½ cup crème fraiche or cream

  • Salt & Pepper

 

Method:

Melt the butter in a large pan over medium heat.

Add onions, celery and garlic (if using) to pan, and cook for a few minutes until soft.Add mussels to the pan, cook on high for 3-4 minutes and add wine. Add crème fraiche, thyme & bay leaves. Season and continue to cook for 10 minutes, stirring frequently.Garnish with parsley and a small spoonful of crème fraiche.Serve with fresh crusty bread.
